King Charles labelled an ‘encyclopaedia’ by former royal chef

The monarch has been praised for practising what he preaches when it comes to seasonal produce, nutrition and sustainable food.

King Charles has been praised for his extensive knowledge of seasonal ingredients, organic meat and responsible food sourcing.

Former royal chef Visen Anenden described the monarch as “an encyclopedia of learning about seasonality, vegetables, and organic meats” while speaking on behalf of Heart Bingo Online.

Anenden said Charles remained committed to the sustainable principles he had long promoted, with much of the royal household’s food produced in-house.

“Everything is made in-house,” he said. “What King Charles preaches, he does. We would get everything from the Duchy Estate.”

The chef explained that milk came directly from cows on the estate and was pasteurised to make products such as double cream.

“It’s extremely self-sufficient. We would make our own breads, cakes, and juices, everything,” he added.

Reflecting on his early career, Anenden said Charles introduced him to ideas that were rarely discussed in professional kitchens at the time.

“From a chef’s perspective, when you come from restaurants, at the time I was learning, there was no such thing as heritage produce, seasonality, or ethical sourcing, nothing about that when I was starting out,” he said.
